Make Ahead Homemade Pancake Mix

Hello there, homemaker!

If your mornings are anything like mine, you probably love the idea of cozy, homemade pancakes—but don’t always have the time to make them from scratch. For years, I kept a box of “just-add-water” pancake mix in the pantry. It’s convenient, it’s quick, and all you have to do is add water.

But have you ever stopped and wondered what’s really inside that box?Well, I certainly have. And once I started reading the labels, I realized something important: pancakes don’t need a long list of stabilizers, preservatives, and artificial flavors. Pancakes are supposed to be simple. Flour. Baking powder. Sugar. Salt. Maybe powdered milk—nothing mysterious.

That’s when I started making my own homemade pancake mix, and friends...I've decided not to go back to store-bought !

In true homesteading fashion, this homemade pancake mix is thrifty, practical, easy to store, and—best of all—made from ingredients I already trust.

Homemade pancake mix is one of the easiest pantry staples you can whip up, and it feels so good knowing your breakfast comes from real, wholesome ingredients you can actually pronounce. Plus, it stores beautifully and makes busy mornings feel calm, cozy, and intentional.

Why Make Homemade Pancake Mix?

 Control Over Ingredients

No preservatives, no artificial flavors, no “stabilizers.” Just the basics: flour, baking powder, sugar, and salt.

Convenience Without Compromise

It’s just as quick as store-bought—mix + milk + eggs + butter = pancakes in minutes.

Perfect for Pantry Storage

Make a big batch, store it in a jar, and breakfast is always halfway done.

Frugal & Practical

Bulk ingredients cost far less than boxed mixes. Your wallet will thank you.

Better Flavor & Texture

Light, fluffy, tender pancakes every single time. No weird aftertaste.

Perfect Homemade Gift

It makes a perfect homemade gift, too! It's cheap and easy to make, and delicious your receiver will surely love!

How to Make Pancake Mix from Scratch

Yields: About 6 cups of mix (roughly 3–4 batches of pancakes)
Storage: Up to 2 months in an airtight container

Dry Mix Ingredients

  • 4 cups all-purpose flour
  • 3 tablespoon baking powder
  • ¼ cup white sugar
  • 1 teaspoon salt

Optional add-ins for flavor:

  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla powder
  • ½ cup powdered milk (to make it “just add water”)

Instructions

  1. In a large bowl, whisk all the dry ingredients together.
  2. Store your mix in a glass jar, pantry container, or reusable bag.
  3. Label it with the date and instructions.

That’s it! You’ve made your own ready-to-use pancake mix—simple as can be.

To Make Pancakes Using Your Mix

For every 1 cup of pancake mix, add:

  • 1 cup milk (or buttermilk)
  • 1 egg
  • 2 tablespoon melted butter or oil

Directions:

  1. Whisk wet ingredients together, then stir in pancake mix until just combined.
  2. Cook on a lightly greased skillet over medium heat.
  3. Flip when bubbles form and the edges look set.
  4. Serve warm with butter, syrup, berries, or your favorite toppings.

Tips for the Fluffiest Pancakes

  • Don’t overmix—lumps are your friend!
  • Let the batter rest 5 minutes before cooking.
  • Use buttermilk for extra rise and tang.
  • Add chocolate chips, blueberries, or diced apples for fun variations.

A Little Homesteading Joy

Learning how to make pantry staples—from baking mix to broth to bread—feels like reclaiming a skill our great-grandmothers knew by heart. There’s something deeply satisfying about pulling out a jar of your own homemade pancake mix on a slow morning, heating the skillet, and making breakfast from ingredients you trust.

It’s these tiny rituals that make homemaking feel grounded, warm, and meaningful.

So the next time you’re tempted to grab that box from the store, remember… you can make something better right at home. And your kitchen will smell amazing while you do.
